In real life, the Aztecs called themselves the "Mexica" and thus in my opinion, rather than becoming Mayans, Aztecs should instead become Mexican pops.

To my knowledge the amount of Spainish and slave inbreeding was somewhat small, if anything, one could model this by having all aristocrats be Spainish.
