I got FoTG ages ago but never got into it due to the build/rebuild way you handle units. I'm considering giving it another chance.
I was wondering... how to best enjoy the Knightly Orders in FoTG? (if possible with a startdate pre 1400)
Is there a mod one would advise?

AGCEEP would be one choice. More events than the vanilla Teutons and a far more historical starting position in 1419 where in vanilla the Teutons are moved into the baltic states.
If you put more value on a start date before Tannenberg try Age of Timur.
