Well, I've been playing the Kingdom of Sicily since the start of the game in 1066 [duchy of apulia originally], and my dynasty stubbornly refuses to become italian. Which isnt helped by the fact that my Capital is Messina, which is Greek, and not adjacent to any Italian territories. The thing that sort of irks me, is that if I never make my dynasty Italian, I can never hope to spread Italian culture to the Greek provinces of southern italy, let alone sicily (which, if my understanding of cultural transmission is correct, is actually impossible anyway, since its an island?). So, basically: How do I edit a save game to change the culture of a province?

Change culture in provinces "section" in name_of_save.eug
You can also change culture of your characters. Same - culture = xyz in character section (open save with text editor, search your king by name or dynasty id/character id if you know). If anybody wants to explain how to edit anything in save, just write.
