Have been searching for it and all the answers I've found seem to be outdated. So... How do I reset the Great Holy War cooldown in the last version of the game, with Holy Fury and all the DLCs?

Can it be done via console? Can i reset it for myself only?

I don't think it can be reset via console or conventional mod commands. And I can't see a relevant define either. In fact, I can't see how that 50-year delay is implemented at all!

The only thing I can think of at this point is some kind of save-game editing, but I'm not sure exactly what would be required. (Delete prior crusades from the history? Delete a flag somewhere? Maybe it'll be obvious if you search the file for "crusade", or maybe you'll get a gajillion hjts.)

Save-editing is indeed the only way. I suspect the cooldown timer (default 30 years, set in defines.lua) is saved on the religion itself, so if you are Catholic, look for catholic=, for Germanic pagan, look for norse_pagan_reformed=, etc. Hopefully you'll find what you're looking for there. You can likely delete the line (or clause), otherwise you could significantly reduce the date or remaining duration.
