My screenshots haven't been working when I pressed f11 lately, but I found out how to fix it. Turns out, if you switch to the legacy directx 9 setting rather than directx 11, it just works for some reason. I another thread on this topic from October (https://forum.paradoxplaza.com/forum/threads/where-are-screenshots-stored-1-12-3.1547329/) but that's old enough that I don't want to necro. Hope this helps anyone else out there having issues!
