Stab hits and AE for declaring war.

Jianzhou allying Ashikaga with it's vassal swarm (only 80k troops at the start of the game).

Were too many people playing Korea and you wanted to change that?

The starting clergy privilege that gives you stab hit when declaring war is bad, yes, but can easily be dealt with by any reasonably competent player.

Korea is absolutely a mess in EU4.

Or a highly competent AI, I suppose. This AI Korea became Emperor of China and is 7th in development among independent tags (although not a great power).

I do agree it's a rather silly representation in-game the way they have it now.

Get rid of the prilviege and no more stab hits. Jianzhou allying Ashikaga means you just attack Jianzhous ally
