I just got the game yesterday and played my first game this morning.

I started as Yamana Sozen in The Onion Wars because its difficulty is the lowest.

When the game starts I have no army, and as I Levy them, every province I have is attacked by armies of 3000-5000. There is no way I can levy an army fast enough to defend against those.

I am at a loss to what to do.

What can be done?

haha, onion Wars. Revenge of the Tamanegi!.

On a more serious note, group your armies a bit and use your greater numbers to force the enemy out. No point levying one province at a time, you WILL need to get a few at once, minimum.

If it still not working for you I would suggest that you start with a smaller, less involved clan. nanbu in the north east or Shimazi in the southwest make a good start. The difficulty rating is probably set for someone who already knows the game. Start to learn how it works with smaller clans first. You may not win but you will begin to undertstand the way things happen.
