Titles says it all...playing as The Ottoman Empire....I attacked Egypt expecting to conquer most of it, but I don't get to choose which provinces I can take? I can only take the war goal? That doesn't make much sense. It would take me the entire game to conquer Egypt. I also see no other peace options...period. I'm clearly missing something here.
 
On the diplomacy screen there's a button labelled "Add Wargoal". Use that to add extra wargoals that you can demand in the peace, at the cost of maximum infamy (5 for Demand Concession). You need the war to be going well and a certain proportion of your population to support jingoism (this tends to go up as long as you're at war with low war exhaustion).

Once they're reduced to 4 states you can annex them whole with the Conquest CB. Egypt are uncivilized, so if you can stay a great power, the "Nationalism & Imperialism" tech lets you do it with Establish Protectorate for much less infamy. (This is an effect of that tech that isn't listed in its tooltip, which is rather annoying.)
