This is something that the Historical Immersion Project does, and something I've come to appreciate: the ability to create a character who has whatever combination of attributes I want to assign them.
As it stands, you can't make a custom character similar to Arthur Dayne or Jaime Lannister or Rhaegar Targaryen without also making that character an imbecile or 80 years old or something, and the 'ruler designer unlocked' mod doesn't appear to work with the GoT mod.
