So I was playing as a very strong vassal king of the Byzantine Empire. I controlled about a third of the empire. I got elected emperor by other vassals in the empire and I was given absolutely no choice in this. This is my first issue. Why can I not choose if I actually want or do not want to become emperor? Because I did not want to become emperor - not since the new dlc anyway. I absolutely hate the new succession system - It's awful. At the top of the screen it says I will lose all my titles and holdings if the elected heir is not of my dynasty. This is pretty ridiculous. So, if I decide to elect someone else, or I fail to get my blood elected I lose everything and the game! Why??? It makes no sense whatsoever. I was doing just fine being a vassal king. I had no problem with inheritance then, but this new succession system attached to the Byzantine Empire title is absurd. Surely, Paradox, you should add an option to block accession of a new title tier.

Easiest way to avoid becoming emperor is to convert to a different religion or culture.

Warning: if you choose to convert to a different religion, particularly a non christian one, be sure to have a hereditary title first.

They'd almost never vote for infidels or foreigners unless something drastic happens. Found that out back when I played as Apulia inside ERE/HRE back during the "every realm is elective monarchy" days. Only ever got voted as ERE once Greece fell to a Jihad from the Seljuks.
