I found it odd that I'm fighting in the Crusades, my king winning over 10 batles + sieges with the same commanders and no friendships form. Sure the crusader trait is nice but outside of that you'd think some friendships would form.

Also beating the same person in battle or taking titles through conquest you'd think would breed more rivals. Maybe even dynastic rivalry.

I totally agree with this. In fact, I think that if you fight multiple wars against the same character you should get an event where you could make them your rival, opening up battle events if you are both in the same battle and perhaps other unique events.
