I've been playing as Norse Germanic pagans and every independent duke level character has been called a "king". My character just died and now his son is labeled as a Jarl.

I understand that his titles are Jarldoms, but what is with the sudden change?

Have you reloaded? Sometimes titles get messed up, but are fixed on a reload.
 
Just spitballing here, but is it possible that Denmark formed the Kingdom of Norway, thus becoming your de jure liege and tricking the game into thinking you were a vassal somehow? Either that or it's just a run of the mill title bug caused by nothing in particular *shrug*.

Ostlandet is not a de jure vassal of Denmark.
