A few hundred years ago Venice was conquered by a mercenary company. As Hungary I fabricated a claim, declared war and conquered all of it...but I only got two Baronies! What happened?

You didn't siege down the entire province, did you?
It's a bug.
If you want you can reload and do it again, otherwise you'll have to wait until the Merc get another landed title. Maybe hire them and purposefully run out of money?
I saved at 81% victory, declared peace and went "WTF?" I reloaded and conquered every holding but nothing changed. What will happen if I eventually convert the game to EUIV?
If you own the county, you will get the province, if you own all the baronies but not the county, you won't get anything.
