I am pretty sure this is new to patch 1.11.1 and I dont know if it has been documented but...
The province of Semien ID number 2771 in Ethiopia is JEWISH at game start in 1444.
It is the only province in the game that is Jewish at game start(and as far as I know there is no events to convert any provinces), so anybody that acquires this province before it gets converted could potentially become Jewish either by rebels or by OPM bankruptcy trick.

Yes. I don't know which one but one of the devs said they are adding the main CK2 religions once they flesh them out a bit first.

I coudn't get the rebels to flip my religion, despite having over half my country converted to Jewish when they enforced demands

Look at your religious unity. If rebels convert you or not game determinate by counting sum of base tax of different religions (one you are about to convert to most be dominant)), however rebels enforced they demand based on province count. If rebels occupied even slightly poorer land you won't get conversion. Once they are close to enforce they demands you could sell some Coptic provinces to vassal or weak neighbour to make sure you will be converted by rebellion. Did you used sortie feature to speed thing a little? This way you can get 4 more provinces controlled by rebels during 24 month count down.

Really? Have the changed it? It used to be a simple 50%+ of your provinces of their religion when they enforce demands in order flip your religion.

I know pagan religions can't flip this way (you have to do the bankrupcy trick) and I was suspecting Judaism was the same...

If you reduce yourself to an OPM and your last province is not the same religion and culture, when you go bankrupt, you get forced into that culture and religion. It's had some really funny implications in the past, as DDRJake has pointed out on more than one occasion (Minghals, Animist HRE).

I understand that. I just hope you will add even more achievements on the next update, because they are not hard to add, but it can be hard to think of. I remember once you were saying about "Siberian Iberia" and similar achievements that you was thinking about adding but somehow you decided not to. I think vast majority of ironman community would like to see achievements like that.

I had the majority of my provinces Jewish (11 out of 19). The Jewish rebels then won and enforced their demands. I lost 50 prestige and had a big hit to LA in all the occupied provinces. But my religion was still Coptic. (I've actually bug reported the matter...)

I forget the exact details as its been a while since I've done it, but if you're an OPM with your province being wrong religion and go bankrupt, you can get your religion flipped even if its one that can't normaally force convert (e.g. pagans)

Jewish count as pagans in eu4 (???) therefore you need to use bankruptcy to become jewish. Or start as a different kind of pagan and then you can use rebels.
