Would the game be better balanced around 4/4/4 or 5/5/5 production?

Yes. People have made mods like that and seem to be happy with it.
Frankly I don't understand the rationale behind having farmers produce so much, and it clashes frontally with the market system that always steers food prices to be equal to mineral and energy.
If market prices were allowed to fluctuate that wouldn't be that much of an issue, but right now going farms-heavy is just always too good.

Honestly I would just cut food from the market entirely. What are the odds that aliens have the same dietery requirements as your own race? Virtually nil.
