Wouldn't it be cool to have human space galleons and orkish waaarships alongside mindflayer tentacle barques and gnomish space baloon vessels?

Don't think it would matter. All you need to know that it's basically D&D in space. I'm sure even people who hadn't heard of it before could still become interested based on that.This would be incredibly cool. Not sure how many people actually know what spelljammer is though, it is after all 27 years old.

The jewelled spheres probably makes it impossible? Like, each solar system is in it's own universe contained within a rigid frame?

Only have one type of FTL so people can't just fly between them, only go through warp portals?
Each solar system in Stellaris appears to be an independent miniature map anyway, represented on the larger map by a point. Is that so different to the spheres? Besides, Spelljammer is pretty liberal with its fluff.
Hyperlanes would be the mechanic.Just make FTL engines penetrate the border between planes.
