I really prefer no colonizers as it makes the game feel much less stressful and it's kinda scaring me off from trying empire mode to not have it available
Would it be possible to add no colonizer option to empire mode?

do you mean, not being able to build colonizers at all? Because there is a planet trait for that

And you can reroll your slate of planets.
MInd you, in the early going the no colonizers option isn't likely to appear. That option seems to be for higher complexity planets only. But if you can stomach a couple basic planets, you will have options. Planet complexity is likely tied to your empire level.
If you mean no settlements on the planet (just monster spawns) that also appears, but may take even longer.
