With 20 width pure inf and support engineer, do you need support artillery for defending?

Definitely, Sup. arty is very cost-efficient production wise. More soft attack makes enemy inf. deorg faster and causes more casualties since inf. division has low breakthrough.
Against tanks, however, you will need more piercing or tanks will destroy your inf.

Depends on what you want to defend:
In singleplayer, pure Infantry is enough to defend the coastline or hold on its own in mountains. Its not a waste to have artillery there cause artillery is cheap.

But it works without arty . For example i played the netherlands recently and had to defend the Atlantikwall. I only used the starting dutch template with Infantry and some divisions with arty to help out if somewhere a landing succeeded (.I needed all factories ( had only 30 mils ) to produce tanks, and planes to help in SU and only had 2 on artillery for the "normal" infantry. )
That worked out very well. Never lost control of any state in france or benelux up to 45. ( for the achievement). And GB and the USA tried to land there nonstop.

Eng, support Art, Support AA. Since my main infanty (7/2) tend to have motorized recon, I put recon on my defensive infantry. But in my use these are only for port garrisons or guarding likely invasion spots, islands, etc.

The support companies don't use much artillery on their own.

Support Artillery isn't really that expensive for a pure 20w infantry division, same with Support AA. so there is no reason for you to not use supper Art. in defensive divisions.
