You can look at the win conditions under F5 -> Victory. There are two listed at the moment:
  • Dominance -> Colonize 40% of all colonizeable planets
  • Conquest -> Conquest all other races

There are two "official" victory conditions: total conquest or domination (40% of the colonizable planets in the galaxy).

... but as with most Paradox grand strategy games, the real fun is in the journey, not in arriving at the victory conditions. The surprises, successes and failures that you encounter while trying to build an empire are always more interesting (and to me, more fun) than any "Victory!" screen could be.

Set your own goals and try to accomplish them. Some AI-alien jerk cut you off from a valuable star system right at the start of the game? Make it your goal to spend the rest of the game making him pay for that. Colonize star systems in the shape of the Paradox logo. Try to make friends with everybody instead of conquering, then set off an endgame crisis and lead the galactic peace-keeping forces to victory over the Fallen Empire.

Damm, i wish there was some more. Quest of restoring ancient empire is my favorite.
Additional victory conditions will perhaps be one of the things added in patches or expansions. As I said, I'm not really concerned about it since I don't need a set of "victory conditions" to tell me whether or not I'm having fun.

We had more victory conditions, but they didn't quite work out so we cut them from the release version. We plan to add more in upcoming patches once we balanced them correctly etc.

Oh, that's good to hear, since I'd love to play more peaceful approaches for winning without having to conquer 40% of the galaxy or every single (!!) empire.

So how do we win in Stelarris?
So far i always got a bit lost what next.

Is this conquest game, or "quest"? I havent touched as much some of events.
It's a sandbox game. That happens with sandboxes. It's up to you if you don't know what next. It's like Zen, it's not the wall and its cracks in front of you, but you :p

Overall dont really like the victory conditions not sure if I really would like something to stop me playing. I have never seen the ai one so if its just for you I guess its fine. Normally I hit the domination never hit the conquest which I think is a little pointless and the federation also have a problem with as my fellow members dont want to fight even liberation wars anymore.

Meh i think i finished one game in stellaris to this day. After you take care of the endgame crisis, its usually just a grind to the end, so i don't bother.

It's possible you aren't being nice enough.

It's very feasable (kind of overpowered actually) to be the nice guys of space. Guarantee your neighbours' independence and send them nice gifts until their opinion gets high enough to form non-aggression and then defensive pacts. Once you have a couple of those, you're pretty safe from aggression for a big chunk of the game, at least. The trust system means that alliances in Stellaris tend to be extremely stable. Probably too stable in fact, we really need something like EU4's rivalry system which promotes conflict even between long-term friends.

For me, I tend to pick a roleplaying scenario or personal achievement to meet when I start playing, which has become much easier with Utopia/banks. One of my favourite things to do is to impose an arbitrary restriction or non-optimal goal (abandon all terrestrial planets and live completely in space, do not have any pops living outside of your home system) and just see how well I can do within those parameters.
