Although there is only one recording of Robert Guiscard's physical appearance, and although it came from a time shortly after he died, it would not be out of the realm of realism to give his physique a visual update. I can see that he got 'robust' with 1.3 recently, and that his eldest son Bohemond received the trait of disinherited from the get-go. Both William the Conqueror and his family members also received some aesthetic updates. But there is as much evidence that Robert Guiscard was tall and blond as there is that he was robust. I am thinking that William the Conqueror's character model is of a good and reasonably accurate height. He too was described in the annals as being well-built and tall, just like Duke Robert, but the latter is still short and also does not look like how he was described. Paradox devs were willing to change William the Conqueror's appearance from looking like a bearded northern barbarian to more like how he does upon the Bayeux Tapestry. Would they also be willing to make Duke Robert 'the Fox' look more like how he was described as well? They've already given him the right traits (although I would also add 'adventurer' as well)!
