I've had Stellaris for a while, but I haven't played much at all.

I'm enlightening a primitive civilization. Once they're enlightened and before they can build fleets, I'm going to invade and enslave them.

Will this work? Or is there something that'll stop it.

If you enlight a primitive civilization they stay primitive till they reach the space age and get a station and fleet. If you invade them before that, they will still be primitive like you never enlightened them.

Once they build a small fleet can I crush it and then invade and grab the planet?

No, that's not how it works.
If you enlighten them, they skip straight to space age.
They also immediately become a protectorate, I think.
If you want their planet so badly, go unrestricted native interference and send armies to take it.

I'd do that that but I just changed that law.

I guess I'll go with a protectorate. I just need planets to help me enslave the filthy two civilizations next to me that like "peace" and "democracy"

If you make them a protectorate, keep in mind the amount of territory that will be ceded to them. Also, you have to wait for them to catch up to about 40% of your tech for them to become a vassal. If you want to fully integrate primitives the peaceful way, you will have to wait for them to become a vassal. It might never happen, or take a really long time if your research far outpaces theirs. If you do not have any pacifist or xenophile ethos, then I would go with covert infiltration to annex them.

I beg to differ, it depends on the situation really:
Since 1.4 protectorates usually start being vassals pretty fast and then you can integrate them 10 years later. Also you shouldn't forget that protectorates give you +0.5 influence every month, so you accumulate quite some influence before you integrate them, which should pay most of the cost of the integration after that, the pops are fully working and not unhappy.
That's the way I usually go.

Waging war to cede on the other hand will generate threat and make their pops unproductive for the first years, but is the fastest way to get the planet.

The third option, if you are not individualist and their ethics sucks: You can Liberate them which will give them your ethics and usually they'll love you enough to join instantly as a vassal. 10 years later when you integrate them you'll have pops that are shifted way more towards your own ethics as the homeworld gains huge boni for it and they won't be angry (unhappy) at you.

I beg to differ, it depends on the situation really:
Since 1.4 protectorates usually start being vassals pretty fast and then you can integrate them 10 years later. Also you shouldn't forget that protectorates give you +0.5 influence every month, so you accumulate quite some influence before you integrate them, which should pay most of the cost of the integration after that, the pops are fully working and not unhappy.
That's the way I usually go.

Waging war to cede on the other hand will generate threat and make their pops unproductive for the first years, but is the fastest way to get the planet.

The third option, if you are not individualist and their ethics sucks: You can Liberate them which will give them your ethics and usually they'll love you enough to join instantly as a vassal. 10 years later when you integrate them you'll have pops that are shifted way more towards your own ethics as the homeworld gains huge boni for it and they won't be angry (unhappy) at you.

0.5 influence a month is just 60 influence in a decade. And if you have multiple small vassals at once, only about 2-3 or planets that you could conquer all in one go? My fleets are large, my resources are large, my influence pool is not. Influence is regularly spent on either expansion, planetary edicts, or suppressing bloody factions. The fact that they aren't unhappy doesn't matter much when you're only dealing with a couple of planets, against like all the influence I've saved up.
