I had charinfo on and saw that my grown heir shows ethnicity: anglo-saxon. Both parents are Norse. He was educated by his mother (Norse). He's the viceroy of England, but that shouldn't affect his ethnicty, right? Should I worry about his culture not being Norse? (All vassals are Norse). How do I correct it if it affects gameplay?

Portrait graphics (ethnicity) don't really impact gameplay. Culture would cause an opinion penalty, but ethnicity does not. If just the ethnicity is wrong, then it's likely your wife cheated on you.
Phew! Thank you! I hoped that was the case. I didn't see "culture" listed anywhere and feared they were one and the same. The "wife" is my current ruler, so no cheating to be had! That's a load off. I'm playing reformed Pagan Norse and don't want my dynasty's culture to change.
It's not that bad if your culture changes, you can more or less easily change it back.
I know I can have the kids brought up by the right culture, but my heir (now my ruler) was an adult so I didn't see how I'd change him back. Darn it! Norse for the Norse! ;D
That was a very odd response to "it's likely your wife cheated on you" until I read the rest of it.
Could also be because of an Anglo-Saxon ancestor. Fairly sure you can end up with the graphical culture of a grandparent or maybe a great-grandparent.
However, if he's the viceroy of an Anglo-Saxon area, it's QUITE possible that random events might have flipped his game culture to Anglo-Saxon. Not as common as a county converting to the ruler's culture, but it is possible. Do you have Rajas of India enabled? If not, Event 55010 may fire and change his culture to that of his capital. With Rajas on, it's a decision for 500 prestige, but can't be chosen if their liege has their existing culture.
It's not crystal clear if we are talking graphical culture or regular culture here. What does it say on his character display? Screenshot would be useful.

Okay, you all convinced me to turn on real_fathers. Much to my surprise my heir's real dad is some Welsh fellow: Gruffydd Brycheiniog. I can't find him anywhere. I'm sure he's dead by now since the parents are all gone. I don't know how she did it since I was playing her! The little minx! He never showed up in her "lovers" panel. Rajas of India is enabled. I was confused since both parents (I thought) were Norse. That explains so much. No one's complained about different culture. That's all I worried about.
You would have gotten advised if you were actively playing her, so I'm guessing this happened while she was heir, but married (or close to it). And if they were lovers (as opposed to a one-off seduction), one of the events that stops the relationship likely fired.
You're SURE that you played her actively from day one of her turning 16?
