I have the AI auto creating/destroying convoys, etc. Have tons of transports, and it uses every one. But I also have tons and tons of destroyer escorts - but it does not assign a single one. What gives? Maybe just not needed since I essentially rule the waves in my game?

The AI does assign convoy escorts - just not the way you might like. It has its own risk assessment.
Try going off auto-convoy to help complicate your game... but you can then have your escorts as you like.

But that's just it Commander - my AI does NOT appear to be assigning the many, many available escorts at all - they are just sitting there idle. But will check again and confirm.
It will not assign them until AFTER you loose some convoys first. As I said, the AI has a different (dumb) risk assessment.
Worse, once it has had some convoy losses, it might take 200 escorts (or all your escorts) to safe guard one trade convoy that got hit, and leave nothing for anything else.
