oh right, I am France, everyone does even my own people hate me.

I got lucky and was able to beat England early on and actually take Aquitaine, even though my allies never defend me, and my people are always revolting (peasants and some patriots) I even had a large amount of rebels successfully make one of my regions belong to Leicester. I had conquered Brittany, cause they couldn't stop attacking me. How come France is unstoppable when it is AI, yet not when I play as it?

Honestly, if you can't play France that's usually a sign you're just not very good at this game...

Did your infamy/BB go too high? If Britanny won't stop attacking you that might be a sign that you've gone too far. Also, your allies will break alliance with you if they don't think it's in their interests to be in the war.

Also, what is your stability like? This could lead to the continual rebellions.

Have you allied your vassals? THis might help as they will often help with mopping up rebels, and will beseige places for you in war.

Are you playing HttT?

Because I believe France is much harder at the first of the game that it was previous. I haven't played as them but I can actually hold them off as England now or Burgandy...

I suggest to you to max out your army regardless of the costs, you can work on lowering your inflation later on with National bank and masters of mint advisors.

Have you been on a war for a long time, with war taxes and taking a lot of casualties? If more than one of the above checks, your problem might be war exhaustion.
It raise rebels in your lands and, I believe, reduces your war capacity, which is an abstract measure used by the AI to decide wether to pick on you or not. You can check your war capacity by opening the current war display.

Yeah, I was just playing a game as Portugal and the English destroyed the French army and took nearly all her atlantic provinces, then Burgundy and Aragon moved in and took most of what was left. Glad to see France has been weakened, I just hope that doesn't happen in EVERY game.

oh right, I am France, everyone does even my own people hate me.
1) Check your infamy (burned flag at the upper left). NEVER - and I mean NEVER EVER - go above your infamy limit. Try to stay below 15 unless necessary, because infamy will reduce relation to ALL countries over time. Having 20 infamy for 25 years means almost everyone will have relations <0 towards you.

2) Keep your stability up. Try to stay at +3 stab at all times. High stab will reduce revolt risk, while negative stab increases RR.

3) Conquered provinces have nationalism. They can - and will - revolt until they have become one of your cores, that means 50 years. The effect wears of over time, so the first ten years are the hardest.

4) Keep WE (war exhaustion) low! If you use large stacks in enemy territory (>2-5k during the early game), you will suffer "attrition", meaning soldiers die from cold, illness or simply desert. Attrition triggers once you exceed the supply limit of a province. If you enter a province with too many men or stay until the end of the month, you will suffer attrition. Usual maximum is 5% (meaning 5% of your soldiers above the province supply limit will die when you enter it or the month changes), but during winter, esp. severe ones (Russia, Scandinavia) it can go up to 15%. This attrition will usually be replaced immideatly, so you will not notice any change in the number of soldiers on the field. At best you will notice your manpower pool depletes slowly.

BEWARE! Avoid attrition at all costs! Whenever attrition occours, your war exhaustion increases. War exhaustion increases (not only, but esp.) your revolt risk and will take years to fade away. Don't use 10.000 men to siege a lvl 1 fort if 2.000 can do the job, don't run with 50k stacks after 5k enemies.

5) Check if other countries have claims. A claim is if one of your provinces is considered to be a core province of another nation. If you took provinces from England, they will still have cores on them, unless you force them to revoke the claims via peace treaty or the province stays out of their hands for 50 (100?) years.

The AI is eager to DOW (= declare war on) any country it has claims on. I noticed this as Holland - I was a big friend of ENG - until I got hold of Calai, which they considered to be a core. They left my alliance, warned me, embargoed me and then started a war.

Yes, France is weaker but I can promise you that won't happen if every game, my game as England I was able to hold off France but they were allied with Burgundy so I had to settle for a white peace. I think it just depends on whether or not France decides to keep relations with the nations around her. Obviously if it pisses to many nations off it will collapse.
