Who will get the ownership of a province?

As Ger I occupied Greece but because I didn't see any use of it I've generously given all the provinces to Italy. Then I started a war against Turkey (from Greece's provinces) but to my unpleasant surprise the new occupied (Turkey's) provinces were in green (Italy)!

How can I do it if it's me who I want to get the ownership? Should I have kept Greece till I've got couple of Turkey's provinces and Get rid of Greece only after that?

Yes, that´s the way. When your units start moving from allied territory that does not belong to a puppet the conquered province will belong to your ally. Once ownership is established you can give any territory to your ally without losing other provinces IIRC. There shouldn´t be a problem with supply, though I´m not sure if you still can SR through your ally´s provinces to reach your own.
