I know CK2 is still in development and there's still DLC for CK2, but who would want to see a CK3 in the next couple of years?

There would need to be a really huge step up in the engine to make CK3 worthwhile. Even DLCless CK2 right now is already well beyond all the competition.
A Victoria 3 with improved economics or EU:Rome 2 (though I'd prefer CK2:Rome) would be cooler.

I am really happy with CK 2. For now, I just want more DLCs and patches fixing old things.

I'd much prefer, maybe Assassins Creed with more like Ck2 features in places.

The only part of Assassin's Creed that was interesting was the pirates in Black Flag, other than that it is nothing more than a washed out series for the sake of money making.
If you find it interesting to run all over the map to retrieve collectibles, towers and what not then i guess you are easily entertained.
While it would be nice with a new Paradox game, i don't think they will be able to top CK2 with all the dlc going on.

Im not sure about all that but yeah I agree no need for new game right now. Maybe make CK2, make it VR compatible and mix it with total war?

Crusader Kings is my favorite series in the Paradox catalogue so a Crusader Kings 3 will be a wonderful thing. But its still many years into the future.
I love Crusader Kings, but I think it will be a long time before we see Crusader Kings 3. Crusader Kings 2 still looks fine (HoI4 looks better with more stuff going on on the map, but it's not a huge jump) and has years of extra development sunk into it. Crusader Kings 3 would have to start with significant less features and take quite some time to catch up with the worthwhile features from DLCs.
To justify Crusader Kings 3 it would have to have some bigger changes in the concept or a jump ahead in the supported technology. Who knows, a VR Crusader Kings where you sit in your virtual throne room with a map of Europe before you might not be so many years in the future.
So I'd rather see Paradox bring Victoria with part 3 to the graphics and handling level of their other grand strategy games and then expand the series with a fifth game: Cold War or Rome/antiquity.
