I'm getting rather bored with one of my full runs and want to take a break, but I don't know who to play for this break. I'm a fan of formable nations, but that's not a requirement, and I'm not skilled enough to play a minor that is surrounded by enemies. So, what's a fun nation to play that isn't too incredibly difficult?

Brandenburg has quite a low starting position, although you need to avoid the Poles taking Neumark.
It fufills everything you asked for.
1 it is a small nation surrounded by even smaller nations.
Your enemies are Poland and Teutonic Order, at first but as long as there is a strong, friendly Emperor, you should be fine.
Inside the Empire, large amounts of princes want to be your friend.
You have easily three formables=Prussia,Germany and HRE.
That's not to say HRE is easy....

Timurids: Can form Mughals. You can have fun as a horde before reforming and westernizing.

Venice: Merchant Republic, can form Italy. I usually don't, though.

Portugal: great colonial & trade game, forming Spain militarily is a real challenge.

Italy has always been a favorite region of mine, Milan is pretty good, starts decently strong, gets a free core to win back from Venice, can be turned into a neat unique Republic if you want, only down side is that forming Italy makes you a Monarchy again, Italy has good ideas to become Emporer if you wanna do that, but it also has good trade nodes if you wanna try to do the trade game,

Basically Milan into Italy has like 50 different ways it can be played out, so whatever your in the mood for you can do

Papal States is an interesting game and is fairly new player friendly.

Never much cared for formable nations. They usually have inferior flags and colours.

For me i really liked forming manchu and then quing. Now playing Kilwa, also fun.
Personally i like nations that provides step by step challenges. For Manchy/quing first you have to form manchu then deal with oriat and/or Ming and then eventually Russia shows up. Kilwa is similar but a little easier.

whats good about Ragusa ? thinking about playing them in the near future.
Kilwa is similar but a little easier.
I wouldn't really say they're "good". They are the underdog merchant republic being one of two non-westerns in the game (the other being Novgorod). They're in a much worse trade node then the others and all the regional powers are looking to annex you.

They do have fairly decent ideas and are catholic allowing you to go reformed in the mid game. If you want to go for the MR colonisation rush you'll have to steal a colony off the Iberians (likely when they're busy in another war) and push into Africa, likely collecting in Zanzibar after blocking off The Cape. Remember you'll have to westernise if you want to use trade companies.

The Papal States, as any other theocracy, will have several changes in the next update, so I'd put those on hold unless you want an achievement run.

I just finished a game with Denmark, and, although my main objective was the complete obliteration of England. If you are able to manage the rebels it can turn into a complete game, as you are in a good position for the colonization (norway provinces), you can go for asia (golden horde, moscovia... ), for the Balkans or Europe, and you can try a merchant game, a diplo one or a militar one.

Ethiopia. It's a challenging game to try get the Prester John achievement. First try to conquer/vassal all your neighbors, while declaring on the Mamluks every time the Ottomans do it. Once you get all Egypt and conquer all the way south (taking the gold provinces from Kilwa and Mutapa, and the East and South Africa CoT), just ally PLC and Austria/France, and beat the crap out of the kebab. It's a fun game that even allows you to taste a bit of the colonial/trade game (take a few of India and colonize Indonesia/Phillipines, and steer trade to your trade nodes).
It was one of the more enjoyable games I ever had.

Trying to form Italy can be fun, but I found once I'd accomplished that there was little else I felt like trying to do with them. But it could keep you going until the DLC/patch turns up, which changes everything about the game.

Just had an Air game. I'd rate it as rather easy: you are small and poor (4 provinces, 12 basetax), but so are all of your neighbors! Pick your allies and rivals correctly, and expansion won't actually be hard. You get +15% morale as your 2nd national idea too, so you won't fear Portugal at all when you meet it. Actually you look at Portugal in the same way France look at Portugal.

For an easier experience, never pick any MIL idea group before westernization and set national focus to MIL.
