Those of you that play Sunset Invasion, what is so appealing about the fantasy scenario? Doesn't it ruin the overall feeling of the game?
Not really, it is an invasion much weaker than the mongols. And because the Aztecs doesn't have any real flavour and also uses feudalism it doesn't really feel out of sync with the rest of the game.

Everything except Sunset Invasion and Songs of the Rus. I might get Songs of the Rus some day but as I've never played a game out there it will have to wait till that takes place.

I am hinting at the possibility that it does not contain any form immersion. Of which I believe the correct answer is yes, as I think that the lack of immersion is one of the biggest flaws of the game.
I rather disagree, I feel just as immersed as I did when I was playing the first one. What do you think would help add to the immersion then?

Flavour events, more ornate UI, giving the catholic religion more depth and real character interactions and stories (aka CK I).
I think that the game is awesome in some aspects, so I still believe that it is the best grand strategy game but I can't immerse myself in it at all. Of course I am talking about vanilla here, there are some mods like The Prince and the Thane and GoT that managed to immerse me.

I've got most of them. Off the top of my head the ones I lack are: Sunset Invasion, the new Rus DLCs, Songs of Albion and the Ruler Designer. I play with them all enabled even if they aren't relevant to who I play just for the added features for the AI etc.

Sword of Islam, Legacy of Rome, and all the portrait packs. I feel those are the essential DLCs in terms of gameplay and aesethics, respectively. Hopefully I'll get the Republic DLC when it comes out along with the mediterranean portrait packs.

I used them all in my last France play through. The Aztecs took over the entire British Isles (Scotland, Ireland and England), but they were entirely crushed 70-80 years after their initial appearance. Gonna see how well they do in my Byzantine game.
