I will give Argentina at try for the first time playing HOI3,then if I get enough experience I will try Germany,then after playing some months the "big gray blob" long enough I will playing Poland trieing to join the Axis and to see what happens next.After that I start with Sweden expanding to a greater Scandinavia as soon as possible.
I will definitely play as a greater number of nations this time around. In HoI2 I tended to limit myself to Germany, France, Britain and Rep. Spain - on occasion I would play as Canada, but anything bigger than that and I find it far too complex to control all the different fronts. Certainly in the case of the Soviet Union (and later on the USA) it's far too vast to do anything effectively - which I guess is maybe realistic.
Argentina for sure! They have some real pre war options to engage in.
One of the more entertaining things I did in HoI2 was taking Argentina into Chile and Uruguay and Bolivia and desperately trying to not have the allies or USA declare war on me.

With UK I'd go for world conquest. With Germany, I quit after conquering SU and USA. With USA, after defeating the axis. With SU, after defeating Germany and USA. With Japan, I'd pull out of China, then see how long I can survive ... ...
Except for Germany, I don't like the idea of waiting for war, while knowing I'm being being out teched by Germany. As for all of you who are saying you are going to start with minor powers...... why?! There's no action!

There most certainly is, especially if you play as something like Brazil. Lots and lots and lots of action as you "unify" South America while trying desperately to keep the U.S. from declaring war on you - and then, if they do, desperately holding out against the endless onslaught of Marine landings while still trying to conquer South America. The only difference is that you don't have hundreds of divisions, you have dozens, and you have to really, really THINK about what you're going to do with each and every one. Sounds pretty awesome to me.

Yeah, Germany is the most fun to play and, in a way, the easiest. At least early on in the war it's fairly easy going. So for a smooth transition into HoI3 I'm going Germany. USA is a close second but is potentially a lot more to handle with 2 possible fronts.
There should be a poll on this topic. Normal threads like this become a feast of post with clever Taunu Tuva remarks...
Probably Germany. Though I might start a game as the Netherlands to get the hang of it. I never understood why some people like to play as a neutral minor like Sweden (other than learning purposes).
GER is a good choice to get a good grasp on the national decisions, considering her somewhat unique position at the center of the pre-war world stage from 1936-1939... Also her armies will be fun to organize with the new CoC. Not to mention the techs she will be able to research and the resulting units. But the diplomacy and politics, resistance movements, large IC base and leadership, decent manpower, the ability to go in any direction, et cetera all make her a great game.
Of course I will probably not finish GER because (I never finish games) I will be so ready for an awesome Pacific war with either major participant. Probably USA.

Both monsters, but allow for some buildups (esp us) and some starter wars (ussr v. Sinkiang (sp), baltics, and finland). With lots of tech teams, and a lot of margin for error.

Plaing as Germany but making the game different. This is what I want to achieve:
Get rid of Hitler when its possible and become PA - if its possible under Kaiser. Imperial Germany and not Nazi/Fascist.
Release Poland (if not possible to ally) without pre WW1 German territories + give Belarusia. Create white Russia to Ural - rest can be commie - Kaukasus as German colony. Free Ukraine - Crimea in Germans hands. Free Baltic States. Finnland gains whole Karelia and Murmansk. Quslings Norway. Danemark - without southern part and Bornholm and Iceland for Germany. Anexation of Luxemburg, Flandres and Holland as Netherlands - rest to Reich. Alsace-Lorraine German, Rest for Vichy. Slovenia and Czech German, Slovakia independent. Croatia gains Bosnia. Spain - Marocco and West Africa + Gibraltar. Italy - Tunisia + East Africa. Turkey - Cyprus + Georgia + Middle East (to restore Ottoman Empire) maybe even whole Arabia. Also get Persia to Axis. Support fo Ireland - Belfast. India independent - left alone. SE Asia for Japan. A&NZ left alone. S and C America - support for coups and right-wing governs. Restoration of Colonial Empire.
