Where are my knights?

Seriously only 5 per barony with lv3 stables? I don't want to play as the germans but it seems like you can only field knight armies with them.
Anyone found out how to build squire lists as not frankish or german liege? I know they were rare and valuable but even an eastern kindoms like Poland and Hungary fielded at least a thousand knights.

Well later on when tech increases, your vassals should make L3 stables themselves. For a kingdom like England that should give you a substantial amount. At the battle of Agincourt, the French only had 1200 mounted knights and the English had less. Keep in mind this was also in the high middle ages(1415).
