I've always been fond of "Definitely the Sultan of Rum", which tasks the Ottomans to control all the "Romes"(Rome, Constantinople, and Moscow). It's certainly not hard(what is with the Ottomans?), but I always thought it was clever.
"Better than Napoleon" is good, and even though the French are pretty strong, you still have the HRE to grind through. Or you could, like me, luck into a PU with Russia and only ever have to worry about the Ottomans(even then, in the final war to get Berlin from Bohemia, their stacks melted like butter, when they weren't milling around the Russian hinterland).
Prester John is a good challenge. It helps that Ethiopia has pretty solid ideas, one of the best (if not THE best) starting monarchs, and there are number of ways you can take it.
I also had a lot of fun with Gold Rush. It's a rush achievement, but you can actually do without completely ruining yourself. You just have so many irons in the fire, it's frenetic and you're a Horde, but your starting ruler and heir are trash and you have to be really careful when dealing with Muscovy and your rival hordes.
