I've always been fond of "Definitely the Sultan of Rum", which tasks the Ottomans to control all the "Romes"(Rome, Constantinople, and Moscow). It's certainly not hard(what is with the Ottomans?), but I always thought it was clever.

"Better than Napoleon" is good, and even though the French are pretty strong, you still have the HRE to grind through. Or you could, like me, luck into a PU with Russia and only ever have to worry about the Ottomans(even then, in the final war to get Berlin from Bohemia, their stacks melted like butter, when they weren't milling around the Russian hinterland).

Prester John is a good challenge. It helps that Ethiopia has pretty solid ideas, one of the best (if not THE best) starting monarchs, and there are number of ways you can take it.

I also had a lot of fun with Gold Rush. It's a rush achievement, but you can actually do without completely ruining yourself. You just have so many irons in the fire, it's frenetic and you're a Horde, but your starting ruler and heir are trash and you have to be really careful when dealing with Muscovy and your rival hordes.

Luck of the Irish + Spanish Fly was a fun game. Took a few tries to find an opener that worked for me, but once I got it, it was a fun game.

Philippine Tiger was also fun, though it dragged a bit towards the end as I hadn't snowballed effectively enough so it got a bit sloggish. That was me not playing as well as I should have though.

I had fun achieving Traditional Player, Pirate Bay of Janjira, and Even Better than Piet Heyn with a Prussia run. Kind of insane what maritime and 1000 light ships "just because" can achieve.
Spanish Fly seems impossible. How do you even survive the brits and the scots with Ofally

Many fun ones are already listed here. 2 favorites of mine not yet mentioned are: First Toungoo Empire and Sunset invasion.
The Toungoo ones makes for a short but intense campaign and once done you have the option to continue exploring its mission tree. The aztec one is interesting in the way that it has 3 stages and keeps you on your toes till mid/late game. First you have to reform, then defend against the colonizers and finally land in europe. Although admittedly the reform mechanics havent aged very well.

One I liked was The Buddhist strikes back, just because there were very few expansion paths outside of going further into India, and every country you destroyed, put an even bigger one in it's way.

Another fun one was Empire of Mann, but with the restriction to 'only' conquer islands. It meant that you didn't destroy any nations, you just took 2-5 provinces of them and made them very angry. At the end of the game I didn't have any strong allies left (every major power has a few provinces that you need. This led to a war declaration of Spain, France, Ming, Ottoman, Russia and the 2 superpowers in India within 1 year. one of the most exciting wars I have had. This game also showed me the fun of a full naval focused game.

Spanish Fly seems impossible. How do you even survive the brits and the scots with Ofally

You have to get lucky with the first French war against the Brits, if any OPM will ally anyone outside of the island or not, if France likes you and whatever happens to the Scots. The start is RNG heavy, plus you will have issues with power and money early on.

Quite a hellish start.

One i liked was Golden Horn.

it made me play in an area i did not consider playing in before and was do to a alliance of the coptic states that were stronger then me more difficult then i thought, but perfectly doable. Had a lot of fun in a large several-years long war against that copts finally breaking their alliance. Short but fun campaign.

Basileus, levant turnabout and kingdom of god were fun too. But some others i have i dont remember anymore because i have done them a long time ago. So maybe there are some that i liked more.

Spanish Fly and Irleand is very easy take all of Irland. The part you can get your hands on. Then colonise the shit out of the new World. Move your center of Trade to new World for more money. Also grab parts of Scotland if you can. If you have more units then english or a close attack smash him. Spain was tricky when they send all minorities to new world now just release galicia asturias and co as vasalls once you have taken land, place your dynastie on throne release them marry them claim throne (get diplo ideas) wait 5 years (savescum) take the throne achievment done.

Re-reconquista was the most fun campaign I had. Cant recommend it enough.

Seconding this one. Had a lot of fun achievements like first Taungu Empire, tiger of Mysore, Norwegian Wood, but liked this one best. Cool formable nation with great ideas. Great mission tree. Access to Holy Orders. Rewarding when you're a little bit creative and adaptive to your situation. Game 1 re-reconquista is likely very different from game 2 re-reconquista, depending on alliances, rivalries and other early game variables.

Maybe it’s just because I first got Luck of the Irish back when Ireland was literally just 5-6 provinces, but I found it incredibly easy to consolidate power in Britannia now as an Irish OPM. I mean, England doesn’t even have a fort in The Pale anymore!
