I've been play normal difficulty, learning the ins & outs of the game, (Thank to this forum) ;) I can win every time & I want to go up to the next level in difficulty, I wanted to know is there any documentation on the differences between difficulty levels ?

I don't think it's documented, but I suspect that the main difference lies in how aggressive the AI is in its expansion and conquest. I hear that the AI on Relaxed is quite content to keep mucking about within its own borders, while on Challenging you can easily be outbuilt by a rival if you lag behind in the city settling race. Actually determining how different this exactly is would probably require dipping into the game's code, because currently you can't start the same map on different difficulty levels.

Another different is in higher difficulty AI will use higher tier unit, if you want AI to field the highest tier unit, choose impossible, because even in challenging it doesn't field the highest tier unit, highest tier unit are temple unit, old troll, magister, gold dragon and their kind.

It is only in impossible difficulty the AI have the capability to gank you.
