I hear people talking building tall and building fat all the time on this forum. What does it mean?
Building tall means limiting expansion and concentrating on research. The more pops and worlds you have, the slower research is.

Building wide means expanding quickly and sacrificing research speed for increased resources and faster fleet building.

And you will see when you decided to go for tall when starting a new game there is juuuuust that one interesting planet out of your reach that you would like to have , so a outpost would be handy for a while to overcome that way to far lying planet and before you know you are playing wide olee .

I'm currently having a game and I've just had 3 planets. But my planets have been high tiles so it hasn't been bad.. Research speed is decent.

But I've had to expand as I've end crisis on and need to support a big fleet.
