I always play single player. I wonder what MP is like?
Is there usually a game going on?
If there is one in progress can i just drop into it as a small nation somehwere in the world? eg kongo, and do my best? (Its not the winning but the taking part!)
What about patches? I presume we would have to be up to 1.08, but i have installed AGCEEP too and want to play the grand campaign...
Do people drop out of the games all the time... if so does the ai take over their nation?

Who are the best MP players? Are some people way better than everyone else?

My game Dogs of War needs a Sweden Sunday nights 7pm US time :)

Yes, most times of the days (especially the Evenings in Central European Time) have more then one game going on.

You cannot join a game on the fly. You can only join when the game is hosted on Valkyrnet (or by connecting to the IP-adress of the host), always before the game is actually started.
When the host thinks he has enough players, he starts the whole thing.

In that aspect it is important to be on time, because everyone has to wait till everyone has showed up.
It is also important to have a somewhat stable computer, because if you crash during game time, you cannot join again till there is a rehost.

Most multiplayer campaigns use the 1.08 patch with the most recent beta. There are also a few games which use mods (like AGCEEP). To find the details of a game, you can browse the threads of it.

If you participate in the game, everyone expects you to stay the time of the session. Usually this is a hour or four.

If somehow you cannot make it, or if you really have to go early, the usual pattern is to find a sub for the quitted player. If that cannot be found, the country will be run by the AI (it also matters if the country in question is a major power (like Spain) or a minor.)

Are some people way better than everyone else?

Yes.
