I am a count in Serdica in Bulgaria and the Fatimids just took a bunch of land from the Byzantine empire,
Some of which is now bordering my land. I see an option for declaring holy war on a province. With that
Said, if I conquer it, will I get to keep it?

first of all, why are you even assuming you can conquer it? :laugh:
unless you get really lucky with enough money for mercs AND the fatimids are in the middle of several different civil and external wars, you won't have enough manpower to be victorious
not to mention that it's highly likely you're speaking of Greece being jihaded to oblivion by the fatimids, which means the ERE itself will have a hard time against then
