Not much else to say here really, even 600 star galaxies suffer now because of the habitat cluster phook we end up with in late game, the issues in 1.4 have been fixed, but they've technically been replaced by new 1.5 features.

I've got my graphics on lowest and don't time accelerate and it's still unbearable to play. To be honest it's the ridiculous fleet sizes the awakened empires feild late game (in excess of 800,000 power) you can't fight them even if the lag makes it unplayable, the 9999 hard fleet cap need removing and reseting to 2000, that way empires plateau and the fights will be balanced late game instead of the massacre we get from awakened empires.

I can run a war in heaven in a 75 civ 3000 star galaxy (obviously modded) fairly smoothly after the initial lag spike. So I think the issue here is that you have a potato computer.

That being said I think Paradox should take a page from Stardock and update the game to 64 bits and increase the RAM cap to 4 gb or higher; Stardock could do it for Sins of a Solar Empire a few weeks ago and even Total war's moved on from 32 bit .exes.

My first utipia game i played until 2570 with no lag. Regarding habs the galaxy was not full of them but every major power had 4 or 5 in home systems including me but i didnt see many more than that

In my case, the lag is caused by Big Fleets. I have to split my fleets in smaller (max 100k) fleets to reduce the lag. Selecting the fleets cause even more lag, so something in the Fleet UI is fucking everything.

I never have lag on any size no matter how 'late' game
I have lag with an I7 processor and gtx 1080(doesn't make it unplayable though), but then again there is loads of stuff to load in Stellaris, they gave us a great big game and great big games lag and have bugs. Atleast Paradox has a track tecord of straightening this out, just look at EU IV which at launch was pretty bad in some aspects, now it is a great game.

I think processor matters more than graphics card with Paradox games, right? I mean, it's more about a huge number of calculations, iterations and various processes than about visually stunning graphics. (although Stellaris has some very suitable graphics)

Personally I have a decent processor (Intel Core i5) but absolutely shit graphics. It's an Intel HD 3000. One could argue I don't even have a graphics card.

Stuff just got laggy out of nowhere. Like from one second to the other. Never had this problem since my new CPU & RAM, and no idea what just happened.

But even aside from lag issues I think deviating from the standard PDX map mode in favour of animated ships was probably the single worst design decision in the history of this game as it makes changes to how the game works more difficult and diverts fun and computing power away from the things that made their other games so great. Plus, the pseudo-rts mapmode comes with none of the cool features of actual rts games.
