Playing as the Two Sicilies in the GC I have expanded my industry, created a nice colonial empire in Africa and almost grabbed al of Italy. So, now what? Im getting in around 1000 gold in surplus each day. The mighty Austria is allied, and Im leading on VP and its only 1878. Ok, its only on normal/normal, but the game seems to lack any challenge after u have constructed those factories and colonies. I dont now what the game lacks, but its something...why should I continue?

"Why should you continue?" The AI nations will not relax. They will seek to be the premiere nation of the World. If you quit trying in 1878, you'll be second rate by 1920. Keep playing to avoid being yesterdays news.

Well, you could fix the events and become Italy :). Or, you could wait for britain to overtake your VP to have something to fight for. Eventually, the US of A will come competing as well... But even with those thing into consideration I can see your point. I managed to continue playing germany simply because of building up for a great showdown against austria, france and russia combined in 1914. You could do as vritain did though, keep the balance of power, intervene in SA, make nations your puppets, fix all of those lousy uncolonised areas in the world by buying and selling claims to the nations of the globe. Start funding and caring for an uncivilised nation and see how they fare aginst the other GPs. Stuff like that, cold war politics. But if it's the domination that is getting you bored, I suggest starting a new game with a more minor country (and one with less growth potential, so you can't become the main industrial powers five years after you learned how to build factorys).
