Have you ever heard of EU4?Me, I'd personally like something to flesh out the late game and expand out the end date further into the Renaissance so you could play as some of infamous Italian republican families such as the Medici and Borgia as well as having the War of the Roses. To further that, I wouldn't mind a tech overhaul, gunpowder, and trade fleshed out.

That's for sure. At least we get a better black death but that's all we get related to the late-game.You're still shit out of luck if you want something fleshed out from 1250 to 1448. So EU4 doesn't matter
There really should be deeper gameplay ability changes, . And it should be about power and cunning.
1. Rise to power without claim, just have powerful friends to support you.
2. Resist and secure imprisonment. Not about arrest change but about panning, power and gunning. Like send 4 your best man to imprison that courtier, but if he/she has power he can have like 10 bodyguards to block your imprisonment attempt and you can decide if you still try to imprison them by killing hes guards or go back and make new plan, if you try to go 4 against 10, then fighting events trigger where is decided if you can take him or not.
3. Have hostages, to keep vassals or enemy at bay. If they have certain traits or rationality they still can act against you even if you have hostages and you can decide if you are merciful or kill, maim or defile hostage.
4. Marry as virgin and event chain for that. If you are not virgin and husband will not like it it will trigger certain events, can abandon daughter if she not virgin anymore or send her to become nun or servant of god.
5. Send courtiers as spies to other courts, let them make friends, start plots and so on.
Shia Islam should play in a totally different way than Sunni Islam, just not the exact same thing. Also some minor religions should get different mechanics. Like Nestorian or some pagan ones, minor heresies...A "Unite Islam" decision would definitely appeal to me. Since a Byzantine Emperor can Mend the Schism by controlling certain places and making them Orthodox, I have no reason to believe a similar decision couldn't be made available for Muslim rulers (though I'd want it restricted to Caliphs). For example, if I'm the Sunni Caliph and I control the requisite counties and have made them Sunni, then uniting Islam would make Shia and Ibadi denominations into Sunni heresies. Likewise, Sunni and Ibadi denominations would become Shia heresies if a Shia Caliph controlled the requisite counties, made them Shia, and took the "Unite Islam" decision.
But Catholics and Orthodox didn't treat Nestorians or Coptic Christians as heresies IRL. They didn't holy war each other or called crusades aganist each other. I get what you mean, but it's complicated.Off the top of my head, I'd say:
Correct heresy system a bit. For example, among Christians, everyone but Orthodox-vs-Catholic should see each others as heresies. Same for Muslim, they should see other branches as heretic. No reason Catholics should hate Messalians less than Fraticelli.
Add Eu4-like trigger based ruler title-name system. Definitely more convenient to mod than system Ck2 still uses.
Allow religion to allow concubinge while banning abduction.
Better patriarchate system. Autocephalous patriarch should be separate positions from court chaplain. Patriarch of top liege should be religious head of all same-religion realm characters... So Exarchs of Byzantium won't have different religious heads than Basileus.
Yea, well it's not gonna happen. You're still shit out of luck if you want something fleshed out from 1250 to 1448. So EU4 doesn't matter
