Looting: While at war, your army in an enemy province (or vice-versa!) will loot that province at the end of the month. You get double the base tax into your monthly budget, distributed however you set your budget sliders. If you can loot 2 or 3 provinces simultaneously you can get a nice load of cash for only one month's inflation, very helpful particularly early in the game. Looted provinces don't give any census tax that year, and can only be looted once per year (13 months, actually).

Maps: You have to capture the capital. Just walking into the province isn't good enough. Beware that pagans will never give you any maps, as they are presumed not to have any.

Defeating an enemy fleet can also result in getting maps. Those maps are not as good however and will not reveal uncolonised provinces or provinces that are too far from the sea.

Pagans will not give you maps if you conquer the capital, but are able to share maps via diplomacy.

True? I had the impression that with 1.09 no map info from pagans was possible under any circumstances.

Edit: Looking carefully at the 1.08 changes I see that it is not possible to steal maps from a pagan nation, nor does annexing them give you the maps. So I suppose that still leaves open the peaceful diplomatic option. Does this work?

2nd edit: My apologies to all. I tried it, and sure enough it is possible to trade maps with a pagan (in my case, Venice and Shawnee, after a few bribes). So bagoj is absolutely correct above.

Speaking of trading maps, did anyone notice that trading with a European nation is now similar to trading with a North American nation?

Previously, I could trade maps with a NA nation and get province information from any occupied land but could never get them to give me knowledge of land that they are aware of that is unoccupied.

Before 1.09, I could trade with a nation like Portugal and get all their explored land added to my map. Now when I trade, I only get their water tiles and the OCCUPIED land provinces only, just like trading with NA nations.

Interesting, huh?

edit - I have never actually tried to trade maps with any other pagan than the ones in NA, so I am not really sure whether my previous experience was because the Iroquois was Pagan or because it was in North America. - end edit

yes you have to be a little careful. When you see how much provinces a certain country knows that you dont know THAT includes explored but unoccupied provinces. However when you sucessfully trade maps you do NOT see those unoccupied provinces.

This is how it should be.
