I know that pacifism is increased by being at peace for a long time, and militarism is increased if you do declare war a lot. But what about the rest, did the devs ever talk about the other ethics?

I'm afraid I missed that info somewhere, or didn't watch that part of the stream.

I heard authoritarianism is increased by unemployment, which is kind of pointless since pops are rarely unemployed for long. It's not like we're managing a game about a capitalist economy.

There was very little hinted about it so far:

Apparently if your current ethics don't quite get the job done, and pops are unhappy, the opposite ethics become more attractive.

Xeno tensions could move some towards Xenophobia, and atrocities towards them would lead to Xenophilia. Also suffering large military losses, or waging an excessively drawn-out war would cause pacifist tendencies, because war looks like a bad idea. If your nation is in "peril", there will be more militarist attraction.

So far, "Poverty", maybe from few consumer goods, as well as "not feeling safe" from high planet unrest, seems to lead to Authoritarian, a lack of freedoms and doing purges seems to lead to Egalitarian.

The ethics of other nations, and your diplomatic relation towards them will also influence them, allies thinking alike, and rivals ethically diverging from each other.

Also I suspect there will be periodic events that would shake your country's belief in a certain ethic. Some badly handled AI malfunction event would make them doubt materialism, for example.

EDIT: Let's not forget the strongest means to control this kind of thing: Helping the ethic factions out, making them more or less attractive through the use of influence. Although, for the faction to exist, some pops must have the suitable ethic.

I agree it should be very reactive to events in the game. But lets say without outside interference it should always adjust to the players playstyle.
So I start with spiritualist just so i get the unique tech and play the game with full research and robots. So over time i become materialist.

OR i start the game pacifist for better relations and to stay alive BUT once i built up my fleet the game realises that compared to my empire size my fleet is formidable so there are already more militarists who are proud and patriotic and wish to use that fleet. Once i start and win a war my people go crazy with pride and embrace the new norm of being full time militarist.
Ofc losing a war and being humiliated will result in shame and unwillingness to engage in additional fights. They will see it as a wrong way once they dont get prosperity and power out of it.
Also individualists could decide that freedom is not for everyone. All they need is an injection of disgusting and filthy but strong xenos who can mine all the goods they need.

So many possibilities.

Xenophobia has increased attractiveness when you share a planet with alien slaves AND when members of your own species are being purged by aliens.
Xenophilia has increased attractiveness when you share a planet with free aliens.
Authoritarian has increased attractiveness when you share a planet with slaves AND when you have a large military presence keeping down unrest, AND when you have a dictatorship government.
Egalitarianism has increased attractiveness when you are enslaved, AND when you are in a democratic government.
Long periods of peace increase attractiveness of pacificism
Long periods of war increase attractiveness of militarism.
Having an alliance with an empire that has different ethos increase the attractiveness of their ethos.
Your empires Ethos also get an attraction bonus.

Those are the ones I specifically remember being said by a developer.

I personally theorize that Materialism will be increased by sharing a planet with helpful robots.

Ones that are not in this thread that I've heard from Martin:

Materialist: research agreements

Xenophobia: living with repugnant Zeno's

Spiritualist: being friends with spiritualists (Missionaries)
