I have heard this term a lot. Being new to this game I am not sure what this means. Does it mean someone somehow owns a land or has a land title? And how can I tell is someone is landed? Thanks...

Characters can have duke or above level titles and not be landed (mercenary captains and holy order grandmasters are unlanded dukes unless they hold a barony/county; religion leaders can be unlanded duke/king level theocracies.)

No, they don't.
But you can land them, after which they will be your vassals. I don't remember the specifics, but there is a trick for vassalizing merc. captains and holy orders.
My impression is that from then on, they behave like the varangian guard, in that only you will be able to call them up.
I thought I read in some thread that if mercenaries took land as a result of not being paid (which I have seen), you could then vassalize them like normal feudal lords (which I have not seen).
