I enjoy HOI2 in any form, but am interested in knowing which mod, in most people's opinion, adds the most realistic historical flavour. Hope this is the right spot to ask this question.

SMEP does make the game more historical and realistic, but it leaves the game open for whatever the user wants to do. If you want the game to play out historically,you can, but if you want to change history, it allows you to do that too. You can do it in a minor way, or drastically, but no matter what route you choose, the game flows almost flawlessly.
Another great thing is that SMEP is updated all the time. So whenever a bug is found, or another idea is presented, it's usually implemented into the game within a week!
