Myself:

Galaxy shape: I like either ring galaxies or 4 armed spirals the most. Ring because it's the least like our own (probably), or alternatively 4 armed spiral, because, as far as people who get paid to look at the sky have been able to guess, it's likely the closest in shape to our own.

Galaxy size: Always 1000, because I like long games and big game worlds with lots of exploration to do. I only wish it could be somewhat bigger; obviously I know the scale of a real galaxy (ours has anywhere from 100-400 billion stars) is absolutely impossible to emulate in a video game. Maybe just a few thousand more stars would be a cool option. Or maybe it would cause people to start whinging about their cheapo PC's getting pan-fried, like when India became playable in CK2. Who knows.

Primitive Civilizations: 5x because by default, there are so ridiculously few of them compared to the default number of AI empires. Seriously, 15 others space age civs, but only one or two in the whole galaxy that are still in the bronze age? That doesn't exactly make sense. Besides, abducting, corrupting and enslaving them is fun.

Habitable Worlds: 0.25x, because I felt there were way too many by default, which cheapened them for me personally. IMHO, habitable worlds should be rare and precious, something worth going to war over.

Empire Placement: Random because I don't like having an inexplicably large number of neighbors right from the start.

Everything else I leave at default ATM.

4-Armed because it's most like our own (Well, 2 armed some say, but I prefer 4 armed).

1000 stars. I love big galaxies. 24 AI, all my custom empires force-spawned. 5 FE, 3 marauders. 4x Primitives, enough to 'line up' with the scale on how many AI empires. 1x Habitable worlds. Random empires.

Standard tech, midgame/endgame, wormholes and gateways.

And a 5x Crisis in a pear tree. Though this is currently really backfiring because the Unbidden have over 60 fleets, each over 350k, and I can muster up maybe 4 fleets of 130k each.

I generally like playing on Large galaxies (800 stars), because they feel big enough to me. Huge galaxies are a bit too big for my enjoyment. Shape-wise, I like Elliptical, primarily because I dislike long, snaky empires from an aesthetic point of view. It's also nice to not be quite as limited on RNG for access to star clusters (spiral arms are pretty difficult to cross into sometimes).

Generally prefer to play with hyperlane density at 1.25, with gateways at 1.5. Getting around can be a real drag if the hyperlane map is weirdly drawn. Upping the density doesn't stop that, but does mitigate it somewhat. And honestly gateways seem to be much rarer than they should be on normal settings. I don't like having to build all of my own gateways all the time.

I'm also of the rather unpopular opinion of increasing the habitable worlds (to 1.25), because I've played too many games where I have pretty much nowhere to put any new colonies. In the early game, and much of the mid game, placing and developing colonies are how you pass the time and prepare for the end-game. I don't like having to fight over habitable planets unless my neighbor is being super dickish about taking all the juicy systems. Even as a warlike empire, I don't like fighting until I feel prepared for it.
