Teutonic Knights, I think. Or the Knights. I like to do it the "hard" way, managed to seize most of Turkey as Knights in EU3, and also colonized most of northern Africa. I wonder how my great crusader empire will unfold in this game? :3

-Hansa first to work out trade mechanics and to have a short run through to see overall changes between Eu3 and Eu4 (so about 300 years maybe).
-England second to see the colonisation system whilst giving me a secure position to intervene in European politics without being too intimately involved.
-Austria third to see how the HRE mechanics work (after seeing it in a limited way with the Hansa)

Then after those three either Persia, Sweden, or an Italian minor for my first proper game :) I would probably inevitably do a Byzantium game at one point, just to see how they fare this time round - also would definitely do a Ming China start to see if Westernisation is fun with them haha :)

May be a bit biased in choice, but England is always great for the start. Fairly difficult to screw up and lets you sample a bit of everything, beginning with land wars with France/uniting the Isles on to sampling colonization, trade and becoming more naval oriented all in a single game.

After that it'll probably some typical interesting game choices such as the, 'choose a tiny country to expand' scenario, a trade republic, a nation that needs to westernize. etc

Come to think of it the 1444 start puts England in a weird place. They are definitely on the back foot in France but still control large areas including Normandy and Gascony. I'm torn between the GC start date and 1453, because getting one's arse felt in a major war right off the bat is a downer, but beating France and retaining significant areas on the continent commits England to endless land wars which, if successful, basically ensure English domination of continental Europe and effective victory in the first century of the game with the colonial race barely begun.
