What are some fun countries to use cavalry with?

I tried to see if Mongolia or Mengkukuo had any cavalry related generals or buffs, nope nothing, only meng has the leader that adds a 5% cav buff which is nice. Saudia arabia has manouver bonus plus cavalry pp thing

I was thinking about doing cavalry for Italy in Africa - see if it's feasible to cover more ground that way since often the Allies have few and inferior troops anyway. I lose most of my men through attrition anyway so maybe cavalry can fix that.

In mods, I know as Japan in Kaiserreich a few patches ago the strategy for invading Russia through Transamur I used was cavalry (taking advantage of breakthroughs and low supply during Russia's civil war)

I did a quick search of the history files to see if anyone starts with a cavalry expert commander, but the search said no. I seem to remember seeing some, but maybe that's a version thing.

Edit: Perhaps I should have been looking for a "Cavalry Leader" rather than an expert, but I only found one of those. It was for Bulgaria, so there's yet another reason to give Bulgaria a shot.
