No, the Aquatic trait does nothing on Gaia planets, no bonuses or penalties to the pop.
Edit: Also Anglers don't get uncapped farming districts, just normal ones.

Which means Gaia Worlds are wet and not wet at the same time.

Do you know if they still get Pearl Divers and Anglers or are they changed back to farmers?
They don't get them if you colonise or conquer a Gaia world, I haven't gotten to the point of trying to terraform an existing ocean world with those districts to Gaia.
