Sorry if this is a stupid question, but is there any way to get Western Units? I thought I would upgrade to them when I finished Westernizing in my Golden Horde game, but I'm still stuck with sad little muslim units getting destroyed by the Ottoman's smaller numbers of Janissaries.

Also the Ottomans are mostly destroying you because of their superior discipline, better generals, and presumably their better army composition.

We were at the same tech level, but I'm pretty sure they had a way better general than I did, and 5% higher discipline. I tried to even it out by posting my armies in the mountains, but that didn't do as much as I had hoped.

Lucky Nations, do not have anything with the actual combat. Some things are affected by Lucky Nations setting (Better generals, quicker manpower recovery, etc), but combat itself is not affected by the fact that your opponent is Lucky Nation or not.

What's the current best practices re: army composition?
First thing - combat width. You have to strive for full combat width artillery in the back row.
Then, for the front row just make sure you never fall under 50% infantry, so it's better to have something like 60-70% infantry, the rest cavalry.
If your general's shock pips aren't awesome you can shove in more infantry. Or if you don't have money.

Also don't be afraid to merc up. If their quality is higher, just wear them out through sheer numbers.

Yes, but having a better general is always important and with Lucky nations the LNs get OP generals, so it's always good to be prepared.

Western has the advantage in that you can choose exactly which pips you want to be strong at since you usually get a choice between 3-4 different units.

In terms of total pip strength, Western is not that bad. It only suffers in the first 10-15 or so tech levels but you should have a massive tech advantage at that point anyway. After that it keeps up with the other tech groups and then blows past them at 26.

However, the best is eastern. Eastern has no weak points whatsoever, and generally tends to be strong both early and late-game, it only suffers to early-game Ottomans but the gap is much closer than it is to Western.

Well they did rebalance the units again, chinese infantry was never the best and eastern infantry was rather weak too.

Chinese infantry was and is loaded in fire late-game, making it arguably getter than some of the infantry with "more pips". Overall though, the pip differential was trashed by general differential in 1.6 and 1.7 and it's now really small when you factor in that a good chunk of the damage is cannons anyway.
