The pitchfork peasants are the stuff of myth, more or less.

heh thats not entirely true. in 19th century croatian viceroy jelacic was gonna lead an army into hungary to defeat the magyar oppresors but on the way there he encountered a returning croatian peasant army armed with pitchforks who had already the defeated the hungarian army. :D

but if i increase the speed of my cavalry in defines, when i outrun retreating armies to the next province with the doubled terrain modifiers for the defender AI armies would get whooped.

Wouldn't that be quite realistic?
If the fleeing army is faster, they would take their stand in the best strategic position they could find. Behind a river or up in the mountains where they get the upper hand.
But if the chasing army is faster they would attack when they have the best position to attack. When the other army gets trapped with a river behind them or while they are actually trying to cross a stream. Or up in the mountains where the defenders have nothing but a steep cliff behind them.
