I feel completely empty right now because all of my ironman games in this correct patch are now completely dead and I don't know what to do about it I really wanna continue them...

Can you try dropping the savefiles(all that you can find) here?
That said, yeah, if the corruption in the savefile caused all data to be lost already then there's not much I can do

it's not that the data is lost, the save loader freaks out before it reaches the province data. Sometimes using paperman by itself works, sometimes removing shit from inside all the 'cooldowns={ }' brackets found in some are save data works, it's just an absolute mess either way and will probably happen to your save again even if you manage to repair it.
