Only displaying one culture and one religion per county is an absurd notion. It's not like you need a pop system to represent minorities either, simple pie charts to represent the distribution of different peoples and some actions/decisions such as proselytizing and persecution/expulsion in order to affect this distribution is way better than nothing. Especially in areas like Spain, where Muslims, Jews and Christians, you really miss out on a lot of dynamics by saying a province is either Catholic or Sunni and just that

Yeah, pretty disappointed that that wasn't touched. It's been brought up a lot.

A simple pie chart of 2-3 faiths that can be changed through actions like proselytizing would be fairly simple.

Are there other games that manage to do that? Because I believe it would require a hell of a code to do that well

It can be represented by simple provincial modifier that could affect not only current situation in province (more/less taxes/levies/stability) but also state of conversion (i.e. if you start converting openly pagan province, {your religion} minority would pop up, later province would be converted but have {pagan_religion} minority and at last it would be fully converted without buffs/debuffs).

I agree that it would be really nice to have province culture/religion represented as percentages instead of the whole province just being a single culture/religion. I hope that this UI just shows the *majority* culture/religion of the province, and under the hood the system actually models them in more detail.
